*Ingredients:
°300g Dried white beans
°1 yellow onion
°2 white onions
°1 carrot
°2 Cloves
°2 garlic cloves
°1 bouquet garni
°2 tbsp. t olive oil
°20cl Tomato coulis
°1 pepper
°1 sprig of flat-leaf parsley
°Salt
°Pepper
*Preparation steps:
Put the beans in a bowl. Cover them with water and let them rehydrate for 12 hours.
Peel the carrot and discard the ends. Remove the first skin from your yellow onion then prick it with the cloves. Lightly crush the garlic cloves.
Drain and rinse the beans. Putting them in casserole dish with carrot, garlic cloves, onion, bouquet garni and a some peppercorns. Cover them generously with salted water and cook them for 1 hour. Check for doneness. Drain your beans and set them aside.
Remove the first skin from your white onions and slice them.
Wash your pepper, cut it in 2, remove the stem, remove the ribs and the white parts then cut the flesh into small cubes.
In a frying pan, sauté the onions in olive oil with a little salt over medium/high heat for 3 minutes, stirring regularly to avoid coloring.
Add the diced peppers, mix and continue cooking for 10 minutes.
Add the tomato coulis, the beans then continue cooking for 5 minutes, stirring.
Serve your beans in small containers. Decorate them with chopped flat-leaf parsley.
